Why It Matters
One of fewer than 30 French palace hotels. Founded in 1967 by Lebanese businessman Jean-Prosper Gay-Para, reportedly to woo Brigitte Bardot (she declined the invitation). Family-owned by Groupe Floirat ever since. Les Caves du Roy nightclub has been the Riviera's most legendary nightspot for over 50 years. Mick Jagger honeymooned here. A recent redesign of signature rooms and suites by French interior designer Laura Gonzalez brought fresh relevance without sacrificing the hotel's character. Zuma, the global Japanese restaurant brand, takes up seasonal residence here in summer.
Open since 1967, the Hotel Byblos holds one of those singular spots in Saint-Tropez that feels genuinely irreplaceable. Built to look like an interconnected Provençal village — all ochre walls, cobblestone paths, cascading bougainvillea and Roger Capron ceramics around the pool — the place carries official French "palace" status, one of fewer than 30 hotels in the country to hold that designation. Mick Jagger honeymooned here in 1971. Beyoncé has shown up. Les Caves du Roy, the nightclub embedded in the property, has been the definitive Riviera party address since day one. But strip away the famous-guest roster and you still have a genuinely good hotel: 91 rooms and suites all individually decorated in warm Provençal tones, a Sisley spa with hammam and waterfalls, an Italian restaurant sourcing from their own 300m² kitchen garden, and a rooftop bar with real bay views. The entry-level option, but don't undersell it. Rooms run 28–38m² and are dotted around the property with views over the village, garden or pool. Each one is individually decorated in warm Mediterranean tones with Provençal accents. King or twin configuration. Some have private terraces or balconies (request on booking). These are genuinely small by palace standards — the 28m² end is cosy.

French designer Laura Gonzalez reimagined a collection of rooms and suites drawing on the spirit of Saint-Tropez — deep navy or celadon green tones, natural materials, bespoke rattan furniture, patterns inspired by ceramicist Roger Capron, and vintage objects alongside commissioned handcrafted pieces. Available across four formats: Deluxe Room (41m², garden view), Duplex Room (56m², living area + mezzanine), Junior Suite (45m², village view), Suite Deluxe (74m², garden view with balcony), and Signature Duplex Suites (56–73m², Mediterranean spirit). The minibar in each room is covered in tiles from Vallauris, the nearby ceramics town.
