Why It Matters

Home to Restaurant William Frachot, one of Burgundy's most respected two-Michelin-star tables. Frachot earned his first star in 2003 and the second in 2013 — both retained through 2026. He's also a member of Les Grandes Tables du Monde. Sommelier Maxime Brunet, named France's Best Young Sommelier in 2013, leads the wine program. The wellness area occupies a vaulted stone cellar beneath the hotel.

A 19th-century coaching inn turned 4-star hotel sitting directly across from Saint-Bénigne Cathedral in Dijon's UNESCO-listed historic center. William Frachot took ownership in 1999, then fully renovated the place in 2019, giving its 28 rooms and suites a clean, contemporary look that matches the spirit of his celebrated kitchen. The restaurant is the real reason to come — two Michelin stars since 2013 and a member of Les Grandes Tables du Monde since 2018, with a menu grounded entirely in Burgundy's seasonal produce and terroir.
