Chapter Roma occupies a neoclassical building from the 1880s tucked down a narrow side street in Regola, the old blacksmiths' quarter that borders Rome's Jewish Quarter. South African designer Tristan Du Plessis took the industrial bones of the place — exposed brick, vaulted stone arches on the ground floor — and layered in dark moodiness: jet-black steel, brass fixtures, gem-toned velvets, and murals by Rome street artists like Warios, Alice Pasquini, and Willy Verginer. It's officially 4 stars but feels considerably sharper, and locals genuinely come here to drink and hang out, which tells you everything you need to know.
