Eden Locke is a 72-apartment boutique aparthotel inside a grand Georgian building on George Street — Edinburgh's most architecturally confident stretch. The inside is a full reset: New York studio Grzywinski+Pons designed it with muted sorbet pastels and Scandinavian-influenced minimalism. Not a square inch of tartan in sight. Every apartment comes with a full kitchen, which makes it genuinely practical for longer stays, not just a weekend novelty. The on-site Mayvn café pulls serious third-wave coffee by day and pivots to natural wines by evening.
