Why It Matters
The only five-star hotel directly attached to a two-Michelin-star restaurant in Carcassonne. Chef Franck Putelat holds the titles of Meilleur Ouvrier de France (2019) and Bocuse d'Argent (2003) — staying here means sleeping inside his creative universe. Regular 'Chefs' Dinner' events bring in two- and three-Michelin-star guest chefs.

The whole idea is continuity: you eat at one of the best tables in southern France, then walk a few steps to your room. Driftwood softens the slate interiors, large floor-to-ceiling windows blur the line between bedroom and private terrace, and some suites put a jacuzzi right outside your door. A personalized wine tasting session led by the hotel's sommelier. Three carefully selected regional wines from the Aude and Languedoc are poured, analyzed, and explained. Must be booked at least 48 hours in advance.
