The only five-star hotel directly attached to a two-Michelin-star restaurant in Carcassonne. Chef Franck Putelat holds the titles of Meilleur Ouvrier de France (2019) and Bocuse d'Argent (2003) — staying here means sleeping inside his creative universe. Regular 'Chefs' Dinner' events bring in two- and three-Michelin-star guest chefs.
A seven-room, five-star boutique hotel that Michelin-starred chef Franck Putelat built directly alongside his double-starred restaurant in 2013. The whole idea is continuity: you eat at one of the best tables in southern France, then walk a few steps to your room. Driftwood softens the slate interiors, large floor-to-ceiling windows blur the line between bedroom and private terrace, and some suites put a jacuzzi right outside your door. Small, intentional, and very much about the food.
