A 17th-century convent founded by the Poor Clare Sisters in 1604, converted into a 5-star hotel and opened in June 2024. Spread across 2.5 acres of classified terraced gardens in Old Town Nice, the property is built around a cloistered courtyard of orange trees and houses a full Roman bath thermal circuit. Rooms skip the televisions entirely — the point here is silence, slow days by the 20-metre lap pool, and farm-to-table meals from the hotel's own organic farm in Touët-sur-Var. Hands-on workshops in the convent's original bakery, where stone-milled ancient grain flour is used. Learn the full process from milling to baking. By arrangement with the hotel.
Suites with kitchens can have a chef come and cook privately — or cook alongside the guest. Alternatively, order a basket of farm produce and cook it yourself. Available in suites with kitchen.
Guided visits to the hotel's own organic farm in the Nice hinterland. The 3,000 m² working farm (250 hens, extensive market garden) supplies all hotel kitchens exclusively. Guide: Avit, the resident farmer.
The hotel's resident herbalist offers personalised consultations in the cloister shop, handcrafted remedies, and artisanal teas infused with herbs grown in the convent garden. A living continuation of the sisters' original pharmaceutical tradition.
Available during French school holidays (summer 2025: July 5–August 31). For ages 4–10, supervised by qualified animators. Activities include cooking and baking with hotel chefs, creative workshops (Matisse-inspired painting, theatre), herbalist-guided garden exploration, yoga, and meditation.
