A 17th-century convent founded by the Poor Clare Sisters in 1604, converted into a 5-star hotel and opened in June 2024. Spread across 2.5 acres of classified terraced gardens in Old Town Nice, the property is built around a cloistered courtyard of orange trees and houses a full Roman bath thermal circuit. Rooms skip the televisions entirely — the point here is silence, slow days by the 20-metre lap pool, and farm-to-table meals from the hotel's own organic farm in Touët-sur-Var.
