Why It Matters
Part of Spain's state-run Paradores network, this property occupies a UNESCO World Heritage Site building. The pedestrian San Pablo Bridge links the hotel directly to Cuenca's old town. The view of the illuminated Hanging Houses from the bridge at dusk is genuinely one of Spain's great hotel moments. Previous guests reportedly include the King and Queen of Spain.
A 16th-century Dominican monastery perched on the edge of the Huécar Gorge, directly opposite Cuenca's famous Casas Colgadas (Hanging Houses). The building was constructed in 1523 in Plateresque Late Gothic style by canon Juan del Pozo and later converted into a Parador. Inside, a glass-enclosed cloister holds a 42-canvas artwork called the 'Malevich Series' by Julián Casado, the old chapel is now a cosy café, and dinner is served in the monks' original refectory under a carved wooden coffered ceiling.

Moderate difficulty, safe for children, approximately 45 minutes to the site of the old Cuenca Castle. Stunning views throughout.
