Why It Matters

One of very few Japanese auberges built explicitly around a legendary restaurant's cuisine rather than the other way around. With only four rooms, the dining experience is genuinely exclusive — chef-prepared kaiseki served directly in your private in-room dining space, course by course, at peak temperature. Head chef Takemoto trained at Kyoto Kitcho; the pedigree is real.

The long-revered Kanazawa restaurant 'Tsurukou' reopened in November 2025 as a four-room Japanese auberge combining fine dining and accommodation. Just four suites, all over 90 sqm, each with a private open-air onsen bath. The on-site kappo restaurant, Tsuruko Chishinan, serves seasonal omakase kaiseki led by head chef Takemoto Keisuke — who trained for 12 years at Kyoto Kitcho before stints at Mizai and Aman Kyoto's Takaan.

Upon check-in, guests are welcomed into the property's tea room with a bowl of freshly whisked matcha and seasonal Japanese sweets made for that day. It's the formal opening of the stay — all five senses engaged before you even see your room.

Counter kappo breakfast at Tsuruko Chishinan

An alternative to in-room breakfast: guests can request a seat at the 8-seat counter in Tsuruko Chishinan and watch the chef prepare their morning meal. Rice cooked in a clay pot is the centrepiece, served with Kaga and Noto accompaniments. Available from 8:00 or 9:00.

In-room private kaiseki dining

The signature experience. Chef Takemoto's kitchen prepares each kaiseki course and serves it directly in your room's private dining area — the same food as the on-site restaurant Tsuruko Chishinan, at peak temperature, in complete privacy. Dinner and breakfast both available in-room.
