A 19th-century Haussmannian townhouse turned 20-room, five-star boutique hotel in central Bordeaux. The building has been restored with serious care — think herringbone parquet, soaring ceilings, and a monumental staircase — but the design moves are contemporary enough to keep things from feeling like a museum. Down in the vaulted stone cellar lies a 1,184 sq ft spa with a heated pool and sauna. The bar, Le Ferdinand, is genuinely special: Grands Crus Classés by the glass, inventive cocktails, and a fireplace in winter.
