A 15th-century Carthusian monastery converted into a 20-room boutique hotel sitting right on the Dijver Canal in central Bruges. The bones are genuinely historic — wood panelling, gilded mirrors, velvet armchairs — all lit by soft Flemish light through tall windows. It's 250 metres from the Markt and the Belfry, yet on a quiet backstreet. No restaurant, no spa, no pool. But the canal terrace in summer and the fireplace salon in winter more than compensate.
