December and January bring the harvest season when jimadores work the fields at dawn and distilleries run at full capacity. The smell of cooking agave fills the air, and you can watch the entire process from plant to bottle. Avoid July and August when afternoon thunderstorms turn dirt roads to mud. But here's the thing about shoulder season - May and September offer empty distilleries and lower hotel rates. Sure, it's warmer, but morning tours beat the heat, and you'll have places like Casa Herradura practically to yourself. The rainy season from June to September turns the landscape emerald green, though outdoor agave tours get cancelled frequently.
